{McAllisters} Broccoli and Cheese Soup

Who doesn't love broccoli and cheese soup??  OK, well I know one person.  She will remain nameless, and this will serve as a check to see if she reads my blog. .  In general though, I think most people are a fan of the cheesy goodness.  If it's served it in a bread bowl I might actually beg for it.

This is an easy and delicious copy cat recipe that will feed an ARMY and make them smile.  Lots of restaurants serve this soup.  This particular version tastes a lot like the kind you'd get at McAlisters Deli (http://www.mcalistersdeli.com/).


Recipe:
1/2 cup butter
1 med. onion chopped
4 cans of swanson chicken broth with garlic
2 16 oz. bags of cut broccoli
1 32 oz. block of velveeta, cubed
1 cup milk
2/3 cup corn starch

Saute butter & onion. Add broth & broccoli and simmer until tender. Add cheese and stir until melted. Add milk. In a separate bowl, mix corn starch with enough water until it becomes a liquid, then add it to soup mixture. It should thicken instantly. Salt & pepper to taste.
